Dry-aged "Class A" beef at Crossing Superspar Nelspruit....taste the difference!
Dry aging is a time-honoured technique in which unwrapped cuts of beef are stored in a specially constructed cabinet where all aspects of the environment are strictly regulated, temperature, humidity, air circulation and bacteria levels.
The meat doesn't spoil during this time, because we age it in tightly controlled conditions that tightly control the levels of moisture and bacteria. During the dry-aging process, moisture is drawn out of he meat. This causes the beef flavour to become even more beefier and more flavourful.
Eat a steak that's been properly dry-aged and there's really no competition. It has a richer, beefier flavour, a more tender, more buttery texture, and a minerally, slightly funky scent. Dry-aged beef puts all other steaks to shame!
